The little pet you used to have as\na child is a delicacy here! It\u2019s not something they eat every day, but it\u2019s\neasy to find and try if you fancy it. Here they like to eat it on a Sunday\nsurrounded by family and friends, or for special occasions.<\/p>\n\n\n\n<p>Many of the touristy restaurants in town sell it for\nyou to try. It usually comes whole, but there are a few places where you can\ntry it without looking into its eyes. <\/p>\n\n\n\n<p>A town about 30 minutes out of <strong><a rel=\"noreferrer noopener\" href=\"https:\/\/www.salkantaytrekking.com\/trekking-in-peru\/cusco\/trekking-machu-picchu-salkantay-llactapata\/\" target=\"_blank\">Cusco<\/a><\/strong> is the best place to go if you have the time. It may sounds simple, and it is, but it\u2019s really tasty. It\u2019s more of a snack, unless it accompanies a larger meal. All over the city and up by <strong><a href=\"https:\/\/www.salkantaytrekking.com\/traditional\/cusco\/city-tour-cusco\/\" target=\"_blank\" rel=\"noreferrer noopener\" aria-label=\" (opens in a new tab)\">Sacsayhuaman<\/a><\/strong> you\u2019ll find ladies selling steaming hot corn with tasty and unique tasting<strong> local cheese<\/strong>.<\/p>\n\n\n\n<p>You should definitely give it a try as it\u2019s very cheap\nand really good. Photo by: @viajarmehacefelizz<\/figcaption><\/figure>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"h-chicharron\">CHICHARRON<\/h2>\n\n\n\n<p>Another hearty meal that we think you really need to give a go before you leave. <strong>The traditional<\/strong>, and most tasty, the method is by frying the pork slowly in its own fat. It\u2019s obviously not the healthiest option but now and again it can be a real treat.<\/p>\n\n\n\n<p>The taste of the <strong>pig <\/strong>is like nothing else and goes really well with its side of raw onion and mint salad with lime drizzled over it. It also usually comes with <strong>fried potatoes<\/strong> and <strong>corn <\/strong>from the region. Photo by: @andrea_conde_escobar<\/figcaption><\/figure>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"h-tamales\">TAMALES<\/h2>\n\n\n\n<p>You\u2019ve probably heard of this little snack as they are sold all over central and <strong><a href=\"https:\/\/www.salkantaytrekking.com\/blog\/tripadvisor-chooses-cusco-as-the-most-popular-south-american-destination-13-photos-that-show-theyre-right\/\" target=\"_blank\" rel=\"noreferrer noopener\" aria-label=\" (opens in a new tab)\">South America<\/a><\/strong>. But, each place has its own way of doing them. In  <strong><a rel=\"noreferrer noopener\" href=\"https:\/\/www.salkantaytrekking.com\/trekking-in-peru\/cusco\/trekking-machu-picchu-salkantay-llactapata\/\" target=\"_blank\">Cusco<\/a><\/strong>, they are completely different from those sold in <strong>Lima<\/strong>.<\/p>\n\n\n\n<p>There are ladies, again, all over town selling them on street corners during the mornings. There\u2019s one great one who sits there all day in the corner of the <strong>Plaza de Armas<\/strong>. You can go for a savoury one with <strong>pork<\/strong>, onions, and olives, or a sweet one with a raisin in the middle. The main ingredients are potatoes of all kinds of color and taste. Some people like to add beans and meat to make it more of a meal.<\/p>\n\n\n\n<p>It\u2019s actually made in a very rustic oven from the\nearth that is heated, and then this in turn, heats up the potatoes. It gives\nthem a unique taste and texture that you\u2019ll only get to try here. It\u2019s in May or June, depending when <strong>Corpus Christi<\/strong> falls. However, there are some places around where it\u2019s available all year.<\/p>\n\n\n\n<p>This is a cold dish, which may seem a bit strange when you hear what\u2019s involved. It includes an array of <strong>Andean delights<\/strong> from guinea pig, chicken, blood sausage, a corn fritter, seaweed, fish eggs, and a few other bits.<\/p>\n\n\n\n<p>The combination of flavors is just right, however, and\nthey go really well together. If suffering from loss of appetite due to\naltitude you may want to order one to share. Photo by: @patrick_e_perez_deza<\/figcaption><\/figure>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"h-caldo-de-gallina\">CALDO DE GALLINA<\/h2>\n\n\n\n<p>This plate isn\u2019t just from <strong><a rel=\"noreferrer noopener\" href=\"https:\/\/www.salkantaytrekking.com\/trekking-in-peru\/cusco\/trekking-machu-picchu-salkantay-llactapata\/\" target=\"_blank\">Cusco<\/a><\/strong>, but they have their own version of it. It\u2019s also very popular in <strong>Lima <\/strong>where they serve it with a boiled egg and noodles. In Cusco, it\u2019s served with rice. <a href=\"https:\/\/choquequiraotrek.com\">Choquequirao<\/a> <\/p>\n\n\n\n<p>It\u2019s a chicken soup which is full of chunks of chicken, whole potatoes, and carrots. It\u2019s the<strong> perfect food<\/strong> if it\u2019s cold and rainy and is very hearty. The broth takes on the flavours of all the ingredients and there\u2019s something satisfying about picking up a whole leg <strong>of chicken drip<\/strong>ping with juices.<\/p>\n\n\n\n<p>This has to be one of the best <strong><a rel=\"noreferrer noopener\" href=\"https:\/\/www.salkantaytrekking.com\/trekking-in-peru\/cusco\/trekking-machu-picchu-salkantay-llactapata\/\" target=\"_blank\">Cusco<\/a><\/strong> comfort foods that we think you have to taste. Restaurants will sell it, but we love to go to the market and order a big steaming bowl of it. You\u2019ll see that <strong>Andean food<\/strong> is abundant and full of <strong>meaty <\/strong>and <strong>organic <\/strong>flavours.
